Regional Food of Trentino-Alto Adige

Trentino Alto Adige is a very mountainous area and is known for the simplicity of its cuisine. Slavic, Austrian, and Hungarian influences prevail and many of the dishes have German names. Sausages, dumplings and root vegetables feature strongly and a lot of the dishes can be classed as good, honest cold weather food.
Fresh water fish is a specialty and Goulash is a regular dish. In common with the rest of Italy, pasta, tomatoes and olive oil are used freely.
Sausages are a very popular meal and they are eaten with mountains of the regions homemade sauerkraut know as crauti.
